Ampersand's stripped when a submitted form reaches the next approver

I have a form that collects customer information such as Name, Address, etc.  When the form is submitted, the form is routed via email component to several individuals for approval.  I have noticed that customer names that contain an ampersand have the & removed when the form is presented to the next approver.  For instance Johnson & Johnson is presented as Johnson Johnson.  

Has anyone else run into this issue?
